About This Course

This course equips learners with the basic skills to execute correct methods of cleaning and maintaining good hygiene in food shops.

What You’ll Learn

Learners will be able to:
a. Identify the types and characteristics of floors, tables and seats in a food shop setting.
b. Know the appropriate person to approach when there is discrepancy at work.
c. List the types and characteristics of crockery and cutlery and their handling and cleaning methods.
d. Describe the organisational procedures relating to collecting used crockery and cutlery.
e. List the types and characteristics of receptacles and/ or racks and their uses in a food shop setting
f. Use the appropriate Personal Protective Equipment (PPE) to collect used crockery and cutlery.
g. Identify the appropriate safety signage.
h. Demonstrate cleaning the food shop and cleaning used crockery and cutlery.
i. Explain the Public Utilities (Water Supply) Regulation 39.
j. Know the proper waste disposal methods.
k. Perform cleaning the refuse-holding area.
l. Identify the consumables cleaning supplies needed to be replenished at the designated storage area.
