About This Course

This course aims to provide learners who are interested in pursuing a skills-based career in the food services industry with the necessary expertise in preparing and cooking western cuisine vegetarian dishes.

What You’ll Learn

At the end of the course, the learners will be to demonstrate competencies to:

a) Prepare different types of kitchen tools and equipment used to prepare different vegetarian dishes.

b) Prepare different types and correct proportions of ingredients, condiments, herbs and spices used to prepare different types of vegetarian dishes.

c) Cook different vegetarian dishes at required cooking time and temperatures using appropriate cooking techniques and methods of seasoning, flavouring and marinating ingredients.

d) Identify different indicators of doneness according to the recipe when cooking different vegetarian dishes.

e) Store ingredients and finished vegetarian dishes properly to extend shelf life.

f) Reinstate work stations in a timely manner.
